Coconut Chicken Breast

A family favourite – coconut chicken breasts 🙂

These coconut chicken breasts are delicious, easy, and super healthy. My husband loooooves them, as do I.

Ingredients – 1 breast (multiple this to make more):

  • 1 chicken breast
  • minced garlic one tsp
  • olive oil 1 tsp
  • desicated coconut 1 tsp

Directions:

  1. Mix the coconut, olive oil and garlic.
  2. Smear half of that mix across the top of the chicken.
  3. Bake the chicken for 15 – 20 minutes at 200 degrees C (400 degrees F).
  4. Turn the chicken and smear the remainder of the mix over it.
  5. Bake for 10 minutes or until cooked through.
